Chicken & Cashew Stir-Fry

A great healthy meal loaded with flavour that the kids will love to cook while also developing those fine motor skills. Use whatever vegetables on hand, this recipe is a great way to clean out the veggie crisper in the fridge. 

INGREDIENTS
1TSP cornflour
1/2 cup chicken stock (use a cube if you don’t have liquid stock)
1TBL soy sauce
1TBl oyster sauce
2tsp peanut oil
4 chicken thighs
1 brown onion
1 clove of garlic
2 spring onions
1 carrot thinly sliced
1 red capsicum
1 broccoli
Snow peas
1 TBL coriander
1/2 cup cashew
Bean sprouts (optional)
Serve wit rice or noodles (your choice)
