As I sit here on a Tuesday evening, finally enjoying a quiet moment at home, it feels surreal to reflect on the whirlwind that has been the opening week of our restaurant at the Dimboola Golf Club. This afternoon, I even managed a “nana nap” and some peaceful time tending to the garden—a stark contrast to the 80-hour week I just powered through to bring this dream to life.
A Team Effort
The weeks leading up to our opening were a frenzy of activity. Electricians, plumbers, and friends all lent a hand to transform the space into a fully functional kitchen and restaurant. My dear friend Renee took the week off work to help me, taking charge of the bar setup, menus, and mastering the Square system—a lifesaver as my brain was in overdrive. Kylie worked her magic with the final touches to the tables and smaller areas, while my sister was on hand for whatever was needed.
The sheer effort of getting everything ready hit me hard last week, but their support kept me going. Knowing I wasn’t in it alone made all the difference.
The Lead-Up to Opening
Monday was a mix of my teaching commitments and last-minute tasks at the club. I started the day by letting the plumbers in to install the dishwasher, then returned after work to unpack items with Renee. By 6:30 PM, I was absolutely spent. Tuesday brought more of the same—final connections and touch-ups from the electricians and plumbers, finishing the menu, and organizing the space.
By Wednesday, we were in the kitchen, getting to grips with the flow and prepping for service. Beautiful bush foods were delivered, and it was a joy to work with such incredible ingredients. Thursday saw another big prep day with the team, including a third-year apprentice new to this style of cooking but eager to learn and thriving. We also welcomed a young kitchen hand starting his hospitality journey. While he’s handling the less glamorous tasks right now, he’s doing a fantastic job and learning the ropes of the kitchen system.
Opening Day
Friday lunch marked the big moment. I took the first order, called out “Order up!” in the kitchen, and felt a rush of excitement. We had around 12 covers for lunch and then hosted a dinner function that evening. Saturday brought another solid lunch service, followed by a soft opening dinner for friends, family, and everyone who had pitched in to help us reach this milestone.
It was an emotional moment for me. When my brother and sister-in-law stopped by in the morning and gave me a hug, the exhaustion caught up with me, and I had a little cry. But after a laugh, a cup of coffee, and their encouragement, I was ready to push through.
The Grand Finale
Sunday lunch was our Chef’s Table event, hosting 20 guests. The feedback from our beautiful customers was overwhelmingly positive, and it was heartwarming to see people enjoying what we’d worked so hard to create.
